Preheat the oven to 400°F (200°C).
Cut the acorn squash in half lengthwise and remove the seeds.
Place the acorn squash halves on a baking sheet, cut side up.
In a small bowl, mix together the sliced almonds, chopped anchovies, olive oil, lemon juice, minced garlic, salt, and pepper.
Divide the almond and anchovy mixture evenly between the two acorn squash halves, filling the hollowed-out centers.
Cover the baking sheet with aluminum foil and bake for 20-25 minutes, or until the acorn squash is tender when pierced with a fork.
While the squash is baking, prepare the optional side dish of your choice (rice, pasta, potato, or greens) according to package instructions.
Once the acorn squash is cooked, remove from the oven and let it cool for a few minutes.
