Preheat the oven to 400 degrees Fahrenheit.
Place the halved acorn squash on a baking sheet, cut-side down. Bake for approximately 20-25 minutes or until the flesh is tender.
In the meantime, cook the basmati rice according to package instructions and set aside.
Heat oil in a pan over medium heat. Add onions, garlic, and ginger. Sauté until onions turn translucent.
Add ground beef to the pan and cook until browned. Drain excess fat if needed.
Stir in turmeric powder, cumin powder, coriander powder, red chili powder, and garam masala. Mix well to coat the beef.
Once the acorn squash is cooked, remove from the oven and scoop out the flesh, leaving a small border around the skin. Chop the scooped-out flesh into small pieces.
Add the chopped acorn squash to the pan with the beef mixture. Season with salt to taste. Cook for an additional 5 minutes to blend the flavors together.
To serve, place a portion of basmati rice on a plate. Top with the spicy Indian acorn-squash and beef mixture. Garnish with chopped cilantro.
