Cooking steps

  • Preheat the oven to 400 degrees Fahrenheit.

  • Place the halved acorn squash on a baking sheet, cut-side down. Bake for approximately 20-25 minutes or until the flesh is tender.

  • In the meantime, cook the basmati rice according to package instructions and set aside.

  • Heat oil in a pan over medium heat. Add onions, garlic, and ginger. Sauté until onions turn translucent.
