1. Wash the asparagus and trim off the woody ends. Cut the asparagus into 1-inch pieces.
2. Dice the onion into small pieces.
3. Cut the tofu into cubes.
4. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
5. Add cumin seeds to the hot oil and stir for a minute until they start to sizzle and release their aroma.
6. Add diced onion to the pan and cook until translucent, about 5 minutes.
7. Add turmeric powder, coriander powder, garam masala, and salt to the pan. Stir well to coat the onions in the spices.
8. Add tofu cubes to the pan and cook for 5 minutes, stirring occasionally.
9. Add the asparagus pieces to the pan and cook for another 5-7 minutes until the asparagus is tender-crisp.
10. In the meantime, heat the cooked brown rice in a separate pot or microwave.
11. Serve the Indian asparagus stir-fry with tofu over a bed of hot, cooked brown rice.
