Cooking steps

  • Preheat the olive oil in a large skillet or wok over medium heat.

  • Add the sliced onions and cook until they become translucent, around 5 minutes.

  • Add the diced potatoes to the skillet and cook for about 10 minutes, until they start to brown and become tender.

  • Push the potatoes and onions to the side of the skillet, creating space in the center.

  • Now, add the sliced bell peppers and minced garlic to the center of the skillet. Cook them for about 5 minutes until they soften.

  • Combine the cooked bell peppers, onions, and potatoes in the skillet. Mix well.

  • In a separate skillet, cook the Beyond Meat (or vegan protein substitute) according to the package instructions. Once cooked, chop it into small pieces and add it to the skillet with the vegetables.

  • Sprinkle cumin powder, paprika, chili powder, salt, and pepper over the skillet. Stir well to coat the ingredients evenly.

  • Add the pre-cooked red rice to the skillet and mix it with the vegetables and protein. Cook for an additional 5 minutes to allow the flavors to blend.

  • Serve the Mexican Beyond Meat stir-fry with a sprinkle of fresh cilantro leaves and lime wedges on the side.
