Preheat your oven to 375°F (190°C).
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt, black pepper, dried thyme, and dried rosemary.
Add the seasoned chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side.
Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 5 minutes.
Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 8 minutes.
While the mushrooms are cooking, prepare a sauce by melting the butter in a small saucepan.
Whisk in the flour and cook for 1-2 minutes.
Gradually whisk in the chicken broth and milk. Cook until the sauce thickens, about 5 minutes.
Place the cooked chicken breasts in a baking dish and pour the mushroom sauce over them.
Cover the dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and continue baking for an additional 15 minutes, or until the chicken is cooked through and the sauce is bubbly.
Serve the chicken with mushroom sauce over cooked rice.
