2. Season the chicken breasts with salt and pepper.

5. Remove the chicken from the skillet and set aside.
6. In the same skillet, heat another tablespoon of olive oil.

10. Meanwhile, cook the rice. In a pot, bring water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the rice is tender. Stir in butter.
11. Serve the chicken with onion, garlic, and mushroom mixture on top of the cooked rice.
