Step 1: Preheat the oven to 375°F (190°C).
Step 2: Season the chicken thighs with salt and pepper.
Step 3: Heat olive oil and butter in a large oven-safe skillet over medium-high heat.
Step 4: Add the chicken thighs to the skillet, skin side down, and cook until golden brown, about 5 minutes.
Step 5: Flip the chicken thighs and add the button mushrooms. Cook for another 5 minutes.
Step 6: Remove the chicken thighs and mushrooms from the skillet and set aside.
Step 7: In the same skillet, add minced garlic, grated ginger, and red chili flakes. Cook for 1 minute.
Step 8: Add chicken broth and scrape the bottom of the skillet to release any browned bits.
Step 9: Stir in heavy cream and bring the sauce to a simmer.
Step 10: Return the chicken thighs and mushrooms to the skillet, spooning the sauce over them.
Step 11: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
Step 12: Remove from the oven and garnish with chopped parsley, if desired.
Step 13: Serve the spicy French chicken thighs with your choice of side dish, such as rice, pasta, potatoes, or greens.
