In a small bowl, combine the minced garlic, honey, salt, black pepper, paprika, cayenne pepper, and olive oil.
Place the chicken thighs in a baking dish and pour the garlic honey mixture over them. Make sure to coat each thigh well.
Cover the baking dish with foil and place it in the preheated oven. Bake for 30 minutes.
After 30 minutes, remove the foil and add the diced mangoes to the baking dish, arranging them around the chicken thighs.
Continue baking uncovered for another 15-20 minutes or until the chicken is fully cooked and the mangoes are tender.
While the chicken is baking, prepare the rice according to package instructions.
