Cooking steps

  • Preheat the oven to 400°F (200°C).

  • In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes, until slightly softened.

  • While the tomatoes cook, prepare the couscous according to package instructions.

  • To serve, divide the cooked couscous onto two plates. Top each plate with a cooked chicken breast. Arrange the roasted potatoes and cooked cherry tomatoes around the chicken.

  • Garnish with fresh parsley. Serve hot and enjoy!
