In a large bowl, soak the alfalfa seeds in water for 10 minutes to sprout.
While the seeds are soaking, heat sesame oil in a pan over medium heat.
Add acorn squash cubes and cook for 5 minutes until slightly tender.
Add apple slices, chopped almonds, red curry paste, soy sauce, lime juice, honey, minced garlic, and sliced red chili to the pan.
Cook for an additional 5 minutes, stirring occasionally, until the squash is tender and the flavors are well combined.
Season with salt and pepper to taste.
Serve the spicy Thai alfalfa seed salad with the cooked acorn squash, apple, and almonds.
Optional side dish: Serve with steamed jasmine rice or quinoa.
