Creamy Thai Almond-Milk Anchovy Baldo-Rice

Cooking steps

  • Rinse the baldo rice under cold water until the water runs clear. Drain and set aside.

  • In a medium saucepan, heat coconut oil over medium heat. Add garlic, anchovies, and red chili (if using). Cook for 2-3 minutes until fragrant.

  • Add the rinsed baldo rice and stir to coat in the oil mixture. Cook for another 2 minutes.

  • Pour in the almond milk and bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes or until the rice is tender.

  • Stir in fish sauce, sugar, salt, and pepper. Adjust seasoning to taste.

  • Remove from heat and let sit for 5 minutes before serving.

  • Garnish with cilantro before serving.

  • Serve hot with a side of steamed jasmine rice or stir-fried vegetables.
