Spicy Indian Beef Short Ribs with Arborio Rice

Cooking steps

  • 1. Season the beef short ribs with chili powder, paprika, salt, and pepper.

  • 2. Heat vegetable oil in a large pot over medium-high heat. Brown the beef short ribs on all sides, about 5 minutes per side. Remove from pot and set aside.

  • 3. In the same pot, add the diced onion and cook until translucent, about 5 minutes.

  • 4. Add the minced garlic and grated ginger, and cook for another 2 minutes.

  • 5. Add the Arborio rice and cook for 1-2 minutes until slightly toasted.

  • 6. Pour in the beef broth and coconut milk, stirring to combine.

  • 7. Return the beef short ribs to the pot, cover, and simmer for 20 minutes or until the rice is cooked and the beef is tender.

  • 8. Adjust seasoning with salt and pepper, and serve hot.

  • 9. Serve with steamed basmati rice as a side dish.
