Peel the banana and cut it into bite-sized pieces. Set aside.
Heat 1 tablespoon of vegetable oil in a wok over medium heat.
Add the minced garlic and grated ginger to the wok and stir-fry for 1 minute.
Add the anchovies to the wok and stir-fry until they start to break down.
Add the banana pieces to the wok and stir-fry for 2-3 minutes, until slightly softened.
Remove the banana mixture from the wok and set aside.
In the same wok, add another tablespoon of vegetable oil.
Add the almonds to the wok and stir-fry until they are lightly toasted.
Remove the almonds from the wok and set aside.
In a small bowl, mix together soy sauce, honey, rice vinegar, and sesame oil to make the sauce.
Add the sauce to the wok and bring to a simmer.
Add the banana mixture back to the wok and stir to coat it in the sauce.
Add the chopped green onions to the wok and stir-fry for another minute.
Add the cornstarch mixture to the wok and stir until the sauce thickens.
Remove the wok from heat and crumble the brie cheese over the stir-fry.
Cover the wok for 1-2 minutes to allow the cheese to melt.
Serve the stir-fry over cooked rice and garnish with toasted almonds.
