Cooking steps

  • 1. In a saucepan, bring water to a boil and add basmati rice. Cook for 18-20 minutes until rice is tender and water is absorbed.

  • 2. In a separate pan, heat sesame oil over medium heat. Add diced tomatoes and cook for 5 minutes.

  • 3. Add cooked rice to the pan with tomatoes. Mix well.

  • 4. Season with salt, black pepper, garlic powder, cumin powder, and chili powder. Stir to combine.

  • 5. Sprinkle grated cheese on top of the rice mixture and cover the pan. Let it sit for 2-3 minutes until the cheese is melted.

  • 6. Serve the cheesy basmati rice with a side of refried beans and tortillas.
