In a small bowl, whisk together BBQ sauce, soy sauce, brown sugar, cornstarch, and water. Set aside.
Heat vegetable oil in a large skillet over medium heat.
Add garlic and ginger, and cook for 1-2 minutes until fragrant.
Add zucchini and cook for 3-4 minutes until slightly softened.
Add blueberries and pickles, and pour in the BBQ sauce mixture. Stir well to combine.
Cook for another 2-3 minutes until the sauce has thickened and the blueberries are softened.
Season with salt and pepper to taste.
Serve hot over cooked rice or your choice of side dish.
