Cook the sushi-rice according to package instructions and let it cool slightly.
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the breadcrumbs, cinnamon, salt, and black pepper.
Grease a casserole dish with cooking spray.
Layer half of the cooked sushi-rice on the bottom of the casserole dish.
Sprinkle half of the crumbled bacon on top of the rice.
Sprinkle half of the breadcrumb mixture over the bacon.
Repeat the layers with the remaining rice, bacon, and breadcrumb mixture.
Bake in the preheated oven for 25-30 minutes or until the top is golden brown and crisp.
