Preheat the oven to 375°F.
In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside.
Add the diced acorn squash to the skillet and cook until tender, about 8-10 minutes.
Add the minced garlic and cook for another 1-2 minutes.
Add the broccoli florets to the skillet and cook for 5 minutes, until slightly tender.
Stir in the heavy cream and half of the grated gruyere cheese. Season with salt and pepper.
Transfer the mixture to a baking dish and sprinkle the remaining gruyere cheese on top.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Serve hot with a side of crusty bread or a green salad.
