Heat 1 tbsp of olive oil in a large skillet over medium-high heat
Add the chicken pieces and cook until browned on all sides, about 5 minutes
Remove the chicken from the skillet and set aside
Add the remaining 1 tbsp of olive oil to the skillet
Add the broccoli and bell peppers and sauté for 5-7 minutes, until the vegetables are tender-crisp
Season with salt and pepper
Return the chicken to the skillet and stir well to combine
Sprinkle the shredded cheese over the top and cover the skillet with a lid to melt the cheese
Once the cheese has melted, remove from heat and serve hot
