In a large skillet, heat olive oil over medium heat. Add onion, garlic, and chicken. Cook until chicken is browned on all sides.

Add 2 cups of water to the skillet and bring to a boil. Reduce heat, cover, and simmer for 15 minutes, or until quinoa is cooked through.
Stir in cherry tomatoes and olives. Cook for another 5 minutes.
