In a large skillet, heat vegetable oil over medium-high heat.
Add chicken pieces and sliced onions to the skillet and cook until chicken is browned on all sides, about 5 minutes.
Stir in Thai red curry paste and cook for another 2 minutes.
Add long-grain rice, coconut milk, fish sauce, soy sauce, sugar, salt, and pepper to the skillet. Bring to a boil.
Reduce heat to low, cover and simmer for 10 minutes or until rice is cooked and chicken is tender.
Remove from heat and let it rest for 5 minutes before serving.
Serve hot with optional Thai basil leaves and lime wedges on the side.
