Peel and slice the cucumbers into thick rounds. Set aside.
Finely chop the onion and grate the carrots. Set aside.
Heat vegetable oil in a pan over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add minced garlic, grated ginger, and sliced green chilies. Sauté for 2 minutes.
Add chopped onion and sauté until translucent.
Add grated carrots and cook for 5 minutes.
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Add sliced cucumbers and cook for another 10 minutes.
Pour in the milk and simmer for 15 minutes on low heat.
Sprinkle garam masala and give it a final stir.
Garnish with fresh cilantro before serving.
Serve hot with steamed rice or naan bread as a side dish.
