Cooking steps

  • Peel and slice the cucumbers into thick rounds. Set aside.

  • Finely chop the onion and grate the carrots. Set aside.

  • Heat vegetable oil in a pan over medium heat.

  • Add cumin seeds and let them sizzle for a few seconds.

  • Add minced garlic, grated ginger, and sliced green chilies. Sauté for 2 minutes.

  • Add chopped onion and sauté until translucent.

  • Add grated carrots and cook for 5 minutes.

  • Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.

  • Add sliced cucumbers and cook for another 10 minutes.

  • Pour in the milk and simmer for 15 minutes on low heat.

  • Sprinkle garam masala and give it a final stir.

  • Garnish with fresh cilantro before serving.
