Cooking steps

  • Score the duck breasts skin in a criss-cross pattern and season with salt and pepper.

  • Heat a large skillet over medium-high heat and add the duck breasts, skin-side down. Cook for 5 minutes, then flip and cook for another 5 minutes. Remove from the skillet and let rest.

  • In the same skillet, add the bacon slices and cook until crispy. Remove from the skillet and chop into small pieces.

  • Add the onion, garlic, ginger, and Thai chili peppers to the skillet and sauté for 2-3 minutes.

  • Add the sliced bananas, soy sauce, fish sauce, brown sugar, chicken broth, and coconut milk to the skillet. Stir to combine and bring to a simmer.

  • Slice the duck breasts into thin strips and add back to the skillet. Cook for another 5 minutes, until the duck is heated through.

  • Serve the spicy Thai duck with banana and bacon over rice or noodles.
