Cooking steps

  • Heat olive oil in a skillet over medium heat. Add onion, bell pepper, and garlic. Cook until softened, about 5 minutes.

  • Add diced acorn squash to the skillet. Season with cumin, paprika, salt, and pepper. Cook until the squash is tender, about 10 minutes.

  • Push the squash and vegetable mixture to one side of the skillet. Crack the eggs into the other side. Season with salt and pepper. Cook until the eggs are cooked to your liking, about 5 minutes.

  • Sprinkle alfalfa seeds over the top of the eggs. Drizzle with almond extract.

  • Garnish with chopped cilantro before serving.

  • Serve the skillet with a side of rice or warm tortillas.
