In a large skillet, heat 1 tablespoon of butter over medium heat.
Add the chopped onion, minced garlic, and grated ginger. Saute until the onions are translucent.
Add the cumin seeds, coriander powder, turmeric, and garam masala. Cook for another minute.
Add the arborio rice and stir to coat in the spices. Cook for 2 minutes.
Add 2 cups of water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
In a separate skillet, heat the remaining butter over medium heat.
Add the tofu and cook until browned on all sides.
Remove the tofu from the skillet and add the eggs. Cook until scrambled.
Once the rice is cooked, fluff it with a fork and gently stir in the tofu and scrambled eggs.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
