Cooking steps

  • 1. Rinse the glutinous rice in a strainer under cold water until the water runs clear. Drain well.

  • 2. Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the pork tenderloin slices and cook until browned on both sides. Remove from the skillet and set aside.

  • 3. In the same skillet, heat the remaining 1 tbsp of olive oil. Add the garlic, onion, and red bell pepper. Cook until softened, about 5 minutes.

  • 4. Add the diced apple, paprika, cayenne pepper, cumin, salt, and pepper. Stir to combine.

  • 5. Add the drained glutinous rice and stir to coat with the spices.

  • 6. Pour in the chicken or vegetable broth and bring to a simmer. Cover and cook for 20 minutes, or until the rice is tender and the liquid is absorbed.

  • 7. Stir in the alfalfa seeds and cooked pork tenderloin slices. Cook for another 5 minutes.

  • 8. Serve hot and enjoy your spicy Mediterranean meal!
