1. In a bowl, marinate the bison tenderloin with lemongrass, salt, and pepper. Let it sit for at least 1 hour.

3. Add the marinated bison tenderloin and sear on all sides until browned.
4. Stir in fish sauce, soy sauce, and sugar. Add coconut milk and water. Bring to a simmer and cook for 2 hours, until the meat is tender.
5. While the bison is cooking, prepare the basmati rice according to package instructions.
6. Serve the spicy lemongrass bison tenderloin over basmati rice. Garnish with green onions and cilantro.
