In a blender, blend lemongrass, lemon juice, lime juice, and lemon extract to make a paste.
In a large pan, heat vegetable oil and add onion, garlic, ginger, green chilies, and cumin seeds. Saute until onions are translucent.
Add the lemongrass paste and stir well. Cook for 2-3 minutes.
Add turmeric powder, coriander powder, curry powder, and red chili powder. Mix well and cook for another 2-3 minutes.
Pour in the coconut milk and season with salt. Simmer for 15-20 minutes.
Garnish with fresh cilantro before serving.
Serve hot with steamed rice as a side dish.
