Cooking steps

  • Cook the pasta according to package instructions, set aside.

  • In a large skillet, heat vegetable oil over medium heat.

  • Add diced potatoes and cook until slightly browned and cooked through, about 10 minutes.

  • Move the potatoes to one side of the skillet and add mackerel fillets, skin side down. Cook for 3-4 minutes per side until cooked through.
