Preheat the oven to 400F.
Season the pork tenderloin with salt and pepper.
Heat 1 tbsp of vegetable oil in a large ovenproof skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 4-5 minutes per side.
Transfer the skillet to the oven and roast the pork tenderloin for 15-20 minutes, or until a meat thermometer reads 145F. Remove from the oven and let it rest for 5 minutes before slicing.
In the meantime, cook the jasmine rice according to package instructions.
Heat the remaining vegetable oil in a large skillet over medium heat. Add the onion, garlic, and chili, and sauté until fragrant, about 2 minutes.
Add the tomatoes, red curry paste, soy sauce, chicken stock, fish sauce, and lime juice. Stir to combine and bring to a simmer.
Add the breadcrumbs and cook for another 2-3 minutes, until the sauce thickens.
Slice the pork tenderloin and serve on top of the jasmine rice. Spoon the spicy tomato sauce over the pork and garnish with cilantro leaves. Enjoy!
