Preheat the oven to 350°F (180°C).
In a baking dish, layer the tomatoes, zucchini, broccoli, and tofu.
In a small bowl, mix together the olive oil, garlic, oregano, basil, red pepper flakes, salt, and pepper.
Pour the oil and spice mixture over the veggies and tofu, making sure everything is coated evenly.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 30 minutes, or until the veggies are tender and the tofu is golden brown.
Serve the Italian Tomato and Veggie Tofu Bake hot over cooked rice.
