Preheat the oven to 400°F (200°C).
Rinse the bulgur and cook according to package instructions.
Season the fish fillets with salt, pepper, and half of the dried oregano and thyme.
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the fish fillets and cook for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
In the same skillet, heat another tablespoon of olive oil and add the sliced onion. Cook for 5 minutes until softened and lightly caramelized.
Add the minced garlic and cook for another minute until fragrant.
Add the asparagus spears to the skillet and sauté for 4-5 minutes until tender-crisp. Season with salt, pepper, and the remaining dried oregano and thyme.
Transfer the cooked bulgur to a serving plate and arrange the fish fillets on top.
Place the sautéed asparagus and caramelized onions around the fish.
Garnish with lemon slices and fresh parsley.
Serve the Mediterranean Fish with Bulgur, Asparagus, and Onions alongside your choice of rice, pasta, potato, or greens.
