Cooking steps

  • Preheat the oven to 400°F (200°C).

  • Rinse the bulgur and cook according to package instructions.

  • Season the fish fillets with salt, pepper, and half of the dried oregano and thyme.

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.

  • Add the fish fillets and cook for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.

  • In the same skillet, heat another tablespoon of olive oil and add the sliced onion. Cook for 5 minutes until softened and lightly caramelized.

  • Add the minced garlic and cook for another minute until fragrant.

  • Add the asparagus spears to the skillet and sauté for 4-5 minutes until tender-crisp. Season with salt, pepper, and the remaining dried oregano and thyme.

  • Transfer the cooked bulgur to a serving plate and arrange the fish fillets on top.

  • Place the sautéed asparagus and caramelized onions around the fish.

  • Garnish with lemon slices and fresh parsley.
