3. Roast the butternut squash in the preheated oven for 20-25 minutes or until tender.
4. While the butternut squash is roasting, prepare the fish fillets. Season them with salt and pepper on both sides.
5. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the fish fillets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
6. In the same skillet, add the sliced button mushrooms and grated ginger. Sauté for 4-5 minutes until the mushrooms are tender and golden.
7. Cook rice according to package instructions. Usually, the ratio is 1 cup of rice to 2 cups of water. Bring the water to a boil, add rice, reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.
8. Once the butternut squash is roasted and the mushrooms are cooked, divide the roasted butternut squash cubes and mushrooms onto two serving plates.
9. Place the cooked fish fillets on top of the veggies and serve with the cooked rice as a side dish.
