1. Cook the egg noodles according to package instructions. Drain and set aside.
2. Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and sliced onion. Saute until fragrant and onions are translucent.
3. Add the sliced chicken breasts to the pot and cook until they are no longer pink in the center.
4. Push the chicken to one side of the pot and add the yellow curry paste to the other side. Stir-fry the curry paste for a minute to release its flavors.
5. Pour in the coconut milk and chicken broth. Stir well to combine everything.
6. Add the red and green bell peppers, kaffir lime leaves, fish sauce, lime juice, sugar, salt, and chili peppers (if using). Stir to mix all the ingredients.
7. Bring the curry to a boil, then reduce the heat and simmer for about 10-15 minutes to allow the flavors to meld together.
8. Taste the curry and adjust the seasoning if needed.
9. To serve, divide the cooked egg noodles into serving bowls. Ladle the spicy kaeng-lueang curry with chicken over the noodles.
10. Garnish with fresh Thai basil leaves and additional sliced chili peppers, if desired.
