Preheat the oven to 425°F (220°C).
Season the salmon fillets with salt and pepper on both sides.
Heat the vegetable oil in an oven-safe skillet over medium-high heat.
Add the salmon fillets to the skillet, skin side down, and sear for 2 minutes.
Flip the salmon fillets and transfer the skillet to the preheated oven.
Bake for 8-10 minutes, or until the salmon is cooked through.
While the salmon is baking, prepare the sauce. In a small bowl, whisk together minced garlic, soy sauce, fish sauce, honey, and lime juice.
Heat a separate skillet over medium heat and add the artichoke hearts and asparagus. Cook for 5-6 minutes, or until asparagus is tender-crisp.
Pour the sauce over the cooked artichokes and asparagus. Stir well to coat.
Remove the salmon from the oven and serve each fillet topped with the artichoke and asparagus mixture.
Garnish with chopped fresh cilantro.
Serve with cooked rice or noodles as a side dish.
