Spicy Chicken and Cabbage Pad Thai

Cooking steps

  • Soak the rice noodles in hot water for about 10 minutes or until softened. Drain and set aside.

  • In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through. Remove the chicken from the wok and set aside.

  • In the same wok, add another tablespoon of vegetable oil. Add minced garlic and sauté for a minute until fragrant.

  • Add the shredded cabbage to the wok and stir-fry for a few minutes until slightly softened.

  • Push the cabbage to one side of the wok and add the beaten eggs. Scramble the eggs until cooked through.

  • Combine the cabbage and eggs together, then add the soaked rice noodles to the wok. Toss everything together gently.

  • Pour in the prepared pad thai sauce and stir-fry for another 2-3 minutes until the noodles are evenly coated. If the noodles seem dry, you can add a splash of water to loosen them up.

  • Add the cooked chicken back to the wok and toss to combine with the noodles.

  • Sprinkle sliced green onions and chopped peanuts over the pad thai. Mix well.

  • Serve the pad thai hot, garnished with fresh cilantro and lime wedges on the side.
