Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
Add the cubed tofu and cook until lightly browned on all sides, about 5 minutes. Remove tofu from the skillet and set aside.
In the same skillet, heat another tablespoon of vegetable oil.
Add minced garlic, sliced onions, and bell peppers. Cook for 4-5 minutes until the vegetables are softened.
Add the cooked tofu back into the skillet and sprinkle with ground cumin, chili powder, salt, and black pepper. Stir well to coat the tofu and vegetables with the spices.
Continue cooking for another 5 minutes until everything is well combined and heated through.
Serve the Mexican tofu stir fry over cooked rice.
