Slice off the tops of the bell peppers and remove the seeds and membranes. Set them aside.
Chop the zucchinis and mushrooms into small pieces.

Add the zucchini and mushrooms to the pan. Cook until tender, stirring occasionally.
Remove the pan from heat and transfer the mixture to a large bowl. Allow it to cool slightly.
Add feta cheese, dried thyme, dried oregano, salt, and pepper to the bowl. Mix well to combine.
Stuff each bell pepper with the filling mixture.
Place the stuffed bell peppers upright in a baking dish.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes, or until the bell peppers are tender and the cheese is lightly browned.
Serve the stuffed bell peppers hot with a side dish of your choice, such as rice or pasta.
